What was the overall approach to designing the identity and experience of this restaurant, both from a culinary perspective and in terms of storytelling?
The overall approach was first to understand the story of the place before thinking about the cuisine. The Regal View Restaurant & Lounge is imagined as the vacation residence of the princesses: an elegant, soothing space where they gather and relax, with different outfits—something that doesn’t exist anywhere else. We wanted the culinary experience to extend this atmosphere. From a gastronomic perspective, this translated into a cosmopolitan, harmonious, and accessible cuisine, inspired by the worlds of the different princesses without falling into literal illustration. Each dish evokes a color, an energy, or a memory, but always with subtlety. The objective was not to recreate a story exactly as it is, but to suggest it through flavors, textures, and presentation. In this way, we built a coherent experience where the décor, the narrative, and the dishes naturally interact.

How would you define the positioning of this dining offering within Disney Adventure World?
The Regal View Restaurant & Lounge holds a unique place within Disney Adventure World. It was conceived as a destination in its own right, beyond just a dining moment. It is the very first Character Dining restaurant in Disney Adventure World. This specificity led us to design every detail to create an experience that is both immersive and refined, where the magic of character encounters aligns with a high-quality culinary offering. The Lounge area also marks an important milestone, as it is the first lounge developed across our two parks at Disneyland Paris. This space brings a more contemporary and elegant dimension to the offering, ideal for a refined break in an exceptional setting. With this dual concept, we are establishing an immersive, innovative, and premium positioning, perfectly aligned with the ambition and evolution of the second park.

What were the main sources of inspiration that shaped the creation of the menu and the culinary experience offered to guests?
Three major pillars guided the creation of the menu.
The first was the narrative universe of the location: The Regal View Restaurant & Lounge is imagined as the residence of the princesses. Each dish therefore had to fit within this imaginary world, through colors, inspirations, or subtle details.
The second pillar was openness to the world. The princesses come from diverse cultural backgrounds; this naturally led us toward a cosmopolitan, harmonious cuisine that blends influences rather than opposing them.
Finally, we make special attention to the overall experience: textures, contrasts, the presentation of the dishes, and the rhythm of the meal. The goal was to offer a coherent journey, where the story continues through taste.
Disney Adventure World stands apart from the historic Parc Disneyland. How is this intention to be different reflected concretely in the culinary offering?
Disney Adventure World follows a different dynamic, one that is more focused on exploration and immersion. This direction is reflected in the culinary offering through a more narrative and cosmopolitan approach. Where the historic Parc Disneyland relies strongly on timeless and heritage-driven worlds, Disney Adventure World invites guests more into travel and discovery. Concretely, this results in a cuisine that blends a variety of cultural inspirations, while still maintaining the accessibility and friendliness that are part of Disney’s DNA. The goal is to support the immersive experience of the land through flavors, textures, and presentation that align with this ambition.

What are the main new features that guests will be able to discover in this restaurant, whether in terms of flavors, formats, or the overall guest experience?
We have crafted subtle flavor combinations, playful textures, and pronounced vegetal touches to bring freshness and modernity to each dish. The meal format: it is a complete experience, designed as a journey, including amuse-bouche, starter, main course, dessert, and petit fours, with our princesses coming to meet guests at the table. Finally, the guest experience goes beyond the cuisine. The décor, storytelling, and presentation all contribute to creating an immersive moment, in harmony with the world of Adventure Way.
How was the culinary offering designed to appeal to both a family audience, meeting the expectations of children as well as adults?
The offering was designed to bring everyone together around the same table. For children, we focused on familiar and comforting flavors, with playful presentations that spark curiosity without complicating the taste. For adults, we paid more attention to aromatic depth, textures, and subtle seasoning. The idea was not to offer two separate experiences, but to create a balance: dishes accessible to all, with different layers of appreciation depending on age and individual sensitivity.
To what extent have the diversity and specific characteristics of the European audience influenced the design of the menu and the recipes offered?
Working for a European audience requires considering diversity from the very design of the menu. Guests come from different cultural backgrounds, with varied taste references. We therefore sought a balance between familiarity and openness. The dishes remain accessible, but incorporate subtle touches inspired by other cultures. The idea is for everyone to find something they recognize, while also being invited to discover something new.
If you had to recommend one or two signature creations from the restaurant, which would you choose and why?
If I had to recommend two signature creations, I would first choose the vegetable and pastrami egg roll, inspired by Snow White’s universe. Visually, it resembles a tree trunk hiding a marquetry of vegetables at its heart. It is a starter designed for children, with comforting flavors and a playful presentation that invites discovery. The idea was to offer something familiar, but presented in a creative and immersive way. For the main course, I would mention the roasted guinea fowl with oriental flavors, inspired by Jasmine’s universe. We worked with mild spices, dried fruits, and preserved lemon to bring warmth and aromatic depth. The plating, with the leg carefully rolled and elegantly presented, reflects the elegance and richness of this world. These two dishes perfectly illustrate the balance we aimed for: cuisine that is accessible, narrative, and harmonious.
